Red
This dish Red turkey on heat was originally designed to go with the poetic short story which is used in the Blue ice menu about an unhappy bricklayer whose sad life only seems to get worse until he turns to violence even when that violence only really exists in his own mind. Both the meal and the story are about taking a simple idea, what is red and taking to its most extreme extent both in monochromatic cuisine and in its literal sense of what we believe red means. The resulting dish is an Asian Eastern European fusion with sweet sour and chili components.
Four ½ cm thick slices of turkey or chicken breast snitzels, 50 grams tom yum gong paste in warm water.
4 medium sized tomatoes
3 red bell peppers ( roasted), 300 mls beetroot juice, 250mls red wine (merlot)
200 gram can of cranberry jelly 2 tbspn sugar, 2 tbspn pickled baby ginger.
150 grams red sauerkraut
Cut chicken breasts or turkey into snitzel slices and roll around roasted red bell peppers .Soak both are in tom yumm gong paste and with a little water for 15 minutes. Bake rolled up in the oven at 350 degrees for 10 minutes until cooked. Leave in warmer until ready to serve and then slice through like a sushi roll. The sauce is a cross between borscht and an aus jus using beetroot juice red wine and chicken stock reducing it by slow simmering with the addition of a small amount of sugar and a can of cranberry jelly. Roasted tomatoes are placed on top of sauerkraut and pickled baby ginger stuffed and baked red bell pepper. All this is finished with a strawberry garnish.

The red under the bed, but McCarthey is gone, and the revolutionary, the union man will not be around much longer either. Crimson runs from his torn hands that hard work, toil, and anger create. The red flame burns on, spiraling out of control; should he have lit it. The flames grow redder and hotter, like the rage that will burn down his little world: his job, his wife, his life. All the houses he has ever built—if only they would burn.
Fire burned down the forests. It was the kiln that baked his bricks, that fed the oven that feeds us all, the warmth in the winter.
It was there when time began, and will be there when it all comes to end.

Fast, fleeting by each field, each day, each moment, as we turn our heads to the side in moving cars wondering which is in more focus, the things we are heading to
wards or the things we are heading away from . The taste of the past that yearns for the future . One wonders whether the colors of spring are appearing or the cold chill of winter is taking its hold . Some of us need to focus and others we just want to sit back and enjoy the ride. Sometimes we just want to appreciate the in between and not second guess the future or the past. Now is for now and should just be enjoyed as the present, or not.

Where did it all go wrong? Poseidon yelled at the sky hoping Zeus would hear. In truth he already knew it was the wine and his love of woman that left him in this state holding in his arms the young Pegasus. In the beginning when the earth was divided between himself and his two brothers Hades and Zeus with Zeus the king to rule supreme He got the ocean, Hades the underworld. This was never enough jealousy, had sown its seed. By night Poseidon would come in from the seas up the rivers looking for adventure and romance giving in to his impulsive nature. On one such journey up the river Pira he found Zeus’s cellar in Barolo wh
ere the best wines in the world where made. Changing into the form of a horse each night he would leave the river and head for the cellar to drink and then roam the countryside searching in his drunken state for love. On one such journey he found a beautiful maiden Medusa and fell so much in love that he made love to her right where he found her in the temple of Athena. When Zeus heard that drunken Poseidon desecrated Athena’s temple he turned
Medusa into a snake headed gorgon and such was her curse until the day Perseus killed her ridding the world of her stoney glare. On her deathbed Medusa as a last act of love gave birth to
Poseidon’s son Pegasus the winged horse and now he sat his son in his arms crying over his lost love. Where did it all go wrong? It was the wine he thought.
It was too good. It gave him such prowess to roam the country and run free in search of love. He knew then, that a long as wine of such quality flowed he would always fall victim to his impulsive nature in search by night of perfect love.

Large scallop, on galaxy of essential flavors radiated out with space together, though always each part in itself which is alone.
In the sea a king among all crustation’s, a creature from out of space, the lobster amongst a school of thought if silverfish could ever think.Well I am sure they think a little.
Lobster tail with silverfish (whitebait) fritters and a blood orange Burre Blanc, the unique served with the many. Dressed up to savor, and soured with grapefruit wedges and arugula.
